<p>Put the Quinoa into a pan and add enough bouillon so that you have 2 parts liquid to 1 part Quinoa.  Boil and then cover and simmer for approx 10 – 15 minutes until all the liquid is absorbed.  Put into a bowl and leave to cool.</p>

<p>When cooled, mix in chopped vegetables and herbs, add oil, lemon juice and vinegar.  </p>

<p>Season to taste and refrigerate for an hour before serving.</p>

<p>Bake in the oven for 15 minutes or until golden brown. Let sit for 5 minutes before serving. Garnish with a little goats cheese and salmon.</p>

<p>Butternut squash – cut into cubes</p>

<p>Dash Worcestershire sauce</p>

<p>Thyme – Tbsp fresh and chopped or 1 tsp dried</p>

<p>Oregano – Tbsp fresh and chopped or 1 tsp dried.</p>

<p><strong>Method:</strong></p>

<p>Lightly brown the chicken and onion in a spray of olive oil. Add all other ingredients with boiled water to cover and Bouillon stock.</p>

<p>Either put into a medium oven in a covered dish or cover and simmer on the hob for around 45 minutes checking periodically and adjusting seasoning where necessary.</p>

<p>Leaving a casserole to cook longer and slower makes it even tastier – so try using a Slow Cooker.</p>

<p><strong>Method:</strong></p>

<p>In a medium size saucepan add 1 cup water and bring to the boil. Add lentils, ginger and ½ tsp Vindaloo spice. Cover and simmer for 10 minutes or until water has been absorbed and lentils are soft.</p>

<p>Remove lentil mixture from heat and place in a bowl. In the same saucepan spray with oil and add leek, garlic and remaining Vindaloo Spice. Return pan to heat, lightly frying leek until soft and fragrant. (If leek mixture sticks to bottom of pan just add a little water.)</p>

<p>Add 1 cup of water to leek mixture, cover and bring to boil. Add lentils and tomato. Simmer for 5 minutes. Turn off heat add baby spinach leaves and stir. Cover and allow to stand for 5 minutes. Stir in Tahini paste and serve immediately with toasted Mountain Bread.</p>

<p>Try Spanish eggs for breakfast. Fry red pepper, garlic and chopped tomato. Add 2 beaten eggs and scramble. Season with black pepper and parsley. Olé!</p>

<p>Instructions:</p>
